Still so hot in Tennessee. A few things that have helped beat the heat have been the AC on at least 75 with a fan blowing at your face, ice cold water in a stainless steel cup, kind neighbors that let us swim in their above ground pool and a cool tomato sandwich.
My friend Haley, who is from Alabama, made me one this weekend and I wanted to share the ingredients for this authentically Southern, tasty summer ‘wich.
TOMATO SANDWICH
2 slices of Merita Bread
Duke’s Mayonnaise
Kosher or Maldon Salt
Black pepper
Big, beefsteak or grainer tomatoes
Slice the tomatoes about half an inch thick. Add salt and pepper to them. Spread mayo on your bread, a good amount. Then assemble the sandwich and cut in half to enjoy ;) Refreshing, comforting, gone in less than a minute.
I also tried some spicy, pickled okra, which was tangy, crunchy and pickly. Consider me converted.
Growing up my mom used to eat a version of this sandwich but with the addition of peanutbutter, which I thought was gross if I’m being honest. But I guess, I can see it being good now…..?!
Anyone else have some different spins on the ‘Mato sandwich?
